Dragon Quest Builders 1 & 2 - thoigh 2 would be my go-to for the QoL and the story.
It's a sort of minecraft clone but DQ skinned, and connected to the mainline games very tangentially. A little grindy if you want to build a lot, but it's easy to get sucked in.

That part in 2 where you are rebuilding the castle and have to venture out into the enemies and then retreat and slowly expand the castle with your looted items deserved a full game

Skyrim in VR with the Sunhelm survival mod is peak comfiness. You gotta keep warm by sitting near fires or you'll freeze to death, so returning to an inn and warming up after a long journey is reminscent of crawling back to the Bar barely alive in Stalker SoC.
