Considering that Zelda was raised by Impa for seven years but never even learned that Bongo Bongo can turn invisible, she probably never got the info or competence required to actually transform, or to even swap outfits with magic. Thus, OoT Sheik is probably a Lens-of-Truth-proof illusion and voice change at best, but if there was a physical form, it would be male. Twilight Princess Sheik is a scrapped idea, but in the idea, Zelda would just dress like one of her guards to escape, so there would be no gender change needed. Hyrule Warriors likewise doesn't require something as thorough as a gender change, that's unique to Zelda not wanting to halfass something again in Ocarina of Time and the trauma of Ganondorf conquering Hyrule.
