Going to be honest. The combat feels awful. The dodge/parry system feels extremely clunky. Maybe clunky isn't the right word. But more so very unresponsive.

The last combat game I played was Hollow Knight. And there I could parry and i-frame 100% consistently within 0.01 seconds of the attack landing. Here is feels like I have to dodge / parry a year in advance for it to do anything.

You aren't wrong, you are very slow and clunky when the game starts. You get upgrades that improve both your parry timing and attack speed, it helps make the game feel way better. I wouldn't say the combat is anything like hollow knight though, its much closer to Sekiro with the parrying and Nier: A with the perfect dodges
If you didnt already try the extra boss battle at the end of the demo, its a bit further into the game and you can feel what its really like a little better

The window for both is extended by the same equippable. Parry is far more important anyway, enemies usually attack 4 or 5 times in a row and you can't dodge them all

Combat isn't clunky, it just punishes heavily for any mistake. And it doesn't even punish you with death, but with worse, looking uncool. You actually die very little since you get so much healing. 4 different healing items that all can have their max held number increased. You end up with close to 15 sources of healing and then on top of that you get healing from killing mobs once you get the item for it and from stealth executions from another different item, and then on top of THAT there's a special skill unlocked later on that can also heal you.
But for the combat to click you gotta realize the name of the game is do not get hit, ever. And then combo from there. Your light and heavy attacks are actually minimal, you're mostly parrying, dodging and then counter attacking, with some beta and burst skills from there
