It's what I use for Astarion and it works even on the hardest difficulty. I change his starts to like 17 Dex/16 Con/11 Wis, and then I can fix the uneven stats at level 4.

theres bard gloves in grymforge that give AC and if you go dueling style you can use a shield. with defensive flourish you get insanely high ac numbers and never get hit. extremely tanky build with lots of support, and you always have eldritch blast for ranged.

stack AC items and put on the heaviest armor you got. Eventually you pick up items that complement radiant damage and you just cast spirit guardians and gg. Constitution isnt the best but you always respec and move points from dex into con. The companions with better con arent going to be using shields.
