I don't know, some old games really didn't, even if you take away story and such out of the equation.
Random personal example just because I played them after each other, but I think for example Shizuku aged a lot better than tsukihime.
Shizuku just works even with dated graphics and themes, even if the story is a bit silly. Tsukihime just feels really dated overall.
And I also don't mind Nasu writing in general, mahoyo for example I like a lot

You can try the remake if you enjoy your experience, but in my view it just doesn't capture the aesthetic.
VNs from the time "look" and "feel" like the original Tsukihime, though it's a different kind of story with different mechanics. If you've enjoyed that, you'll like Toheart.
If you end up trying the original and want to go the extra mile for authenticity's sake, play it on a CRT tv or monitor. It'll look better.
