Demon souls came out first, its a linear experience and looks more cartoony.
How noticeable are the changes comparing from DS1 to DS2 to DS3 to Sekiro to Bloodborne to Elden Cuck. Its the same shit, the changes from demonsouls to DS1 are drastic enough from the artstyle to the flow of the game.

The only FromSoft games I've finished are Lost Kingdoms 1 and 2, Echo Night, Echo Night Beyond, and Ninja Blade. I didn't know they all shared the same developer at the time or anything. They just looked cool.

I think the real problem with FromSoft is that they are allergic to increasing the amount of options available to the player to attack enemies while still increasing the complexity of the enemy attacks in each successive title.
So you end up with shit like Elden Ring where you're having to deal with over the top, flashy 10 minute attacks with the exact same moveset that Dark Souls 1 had, rolling and waiting for an opening which really gets old.

Would nu-FromSoft have turned it into roll slop if they remade it or brought it back?

Kings Field 1 was pretty impressive, 2 and 3 are just not good and 4 only feels like a beta test for Demon's Souls.
Shadow Tower 1 is unplayable. Shadow Tower 2 is interesting and could have been expanded upon, it had potential.
Eternal Ring is garbage. Enchanted Arms is garbage.

Armored Core was good within its sector, but the mecha genre is too small for a company to survive off of.
Souls games sell amazingly and they're also critical darlings.
You'd be a fool to switch it up all that much for titles that no one payed for or enjoyed.

Fromshit have no reason to try anything now, they have millions of loyal fanboys to support their copy+paste games.
