I downloaded a rip of Wendy O'Koopa's model from MK8, (.dae file), but when I import it in Blender, she's just all grey.

How do I texture her?

Make sure the texture is actually selected in the image texture node from the shader editor, then make sure you have the right viewmode selected.

The tard that ripped it exported it with some alpha values set to 0. Select each mesh, go into the Shading tab, and set it to 1.
