So I've always played on consoles, so N64, PS2, Xbox 360, Xbox One, Xbox Series S, Xbox One X, and PC. Am I missing out on something? Does playing on a small screen... I'm not talking about a smartphone, of course, change anything? And which machine do you recommend? What game in particular would be excellent for this style of play?

Really depends on the game. In some you can get a real feeling of screen crunch or claustrophobia where it just doesn't feel like there's enough space to be playing the game.
Some make good use of the real-estate to the point where, despite being smaller, it still feels good like you're playing a game on the big screen, or make it part of the gameplay in some fashion.

Handhelds are really good if you're travelling a lot, or if you feel like playing on a sofa/bed, or if you visit friends often. So you aren't missing out much if you don't get one.

Steam Deck - Jack of all trades master of none is still better than master of one. As long as you don't expect to play unoptimised games it's generally the best. Works out of the box 90% of the time and 5% of the time you have to at most spend a few minutes googling stuff and change a few options.
Other PC handhelds are also pretty good. If you really want to play newest games then pick Lenovo Legion or ROG Ally.
Switch if you want to play Nintendo exclusives.
