UNI's pace on updates is honestly faster than what UNI or any FB game prior to MBTL usually gets. They used to release a version, give it a month 1-2 patch, and then go silent for like 2 years.
At least back when it was an arcade first game it had a bit more frequent patch history but now it's every 6 months.
I haven't played AACC extensively to truly say I favor it over UNI since I only played anons from here and haven't suffered at hands of a dominant F-Hime and C-Roa. I can however say that AACC is absolutely better than MBTL which is the weakest of the three for me.

Fun character, amazing top class mobility, really good pressure, oddly bad mix, bad average damage outside of C starters, great corner carry (everything ends in a knockdown in the corner from anywhere in the screen), somewhat underrated after severe nerfs across several versions post-BBCP1. They still do this for some characters in some modern games but a character that is both harder to play and top tier is often much worse to deal with in more populated games for the vast majority because they will rarely see those characters to learn how to fight against them and everyone devs included knows that people hate dealing with a character that is rarely seen but still completely top tier in the hands of anyone even slightly competent. For example, zafina in Tekken 7, Nina in Tekken 8 and Happy Chaos in ggst.

Two things. First, there's nothing to be made off of playing Blazblue other than honor at this point. Back in the day when there were nationals or it was an EVO mainstage title you could argue for "just pick a top tier", but now no one really gives a shit. People are more prone to just playing who they like and trying to make a name for themselves that way.
Secondly, and this is something you have to decide for yourself as you become more experienced as a fighting game player. Is it ACTUALLY okay for a character to be really, really good, just because they're hard? Because at the end of the day if people wanted to win that badly they'd still play them at the highest level even if they were hard. Like if a character had an infinite but it was "hard" and they might drop it, or if they had unblockable setups, is that okay? Where do you put the cutoff point for the reward regarding a player's investment in learning a given character?
Man, Elizabeth had instant kill setups in P4A/U and she was still bottom 3 because you kind of can't open anyone up. That game was hard.

"Optimal" Izayoi is pretty technical because you'll be doing a safe jump that also option selects every single option your opponent can do. Taokaka is just extremely high APM in general and most people wouldn't consider her worth the effort for a low to mid tier character. Kagura is easy as long as you can deal with charge inputs. You could also play stylish Kagura if you don't want to deal with those since he's the best stylish character in the game but that comes at the cost of losing his absurd damage.

I used to play jSmash and I got to Master as Rashid in SF6 and now I don't want to play fighting games anymore.

It just doesn't feel worth it to learn every character and all their combos like in Smash because it's not as simple and I am finding the back and forth of neutral and pushing highs lows and mids to be tedious now. I am a man above all else. To look the other way and join with those I see as scum is impossible for me. The most I would ever associate with them is if I happen to get matched against them by the game itself, where I wouldn't know it's them. If I joined their discord, it would fulfill the idea that you need a discord, and I would be helping their discord be populated. His win condition is utter cancer but he's required to hit you to get it. Combined with his shitty neutral, some characters can just completely shut him down before he can get a hit which makes his MU spread polarizing. He can still rob anyone once he gets a hit though.
