If you think about it, 3d Mario was never primarily focused on collecting things. The main focus was on the missions which forced you to engage with the levels and platforming.
Sunshine was the complete opposite of the other 3d platformers at the time, which tended to focus on mindlessly collecting things in an open sandbox. Sunshine doubled down on 64's mission style and made it so that each mission changed the level in a unique way
Odyssey, on the other hand, does nothing but copy the trends of other 3d platformers and focuses almost completely on collecting things in a sandbox vs actual interesting missions.
I feel as if Nintendo is embracing this design style because it's much easier than making, let's say another game like Super Mario Galaxy. You can just make a sandbox and then copy and paste objectives.
BOTW is similar in this regard. It rejects the hand crafted massive dungeons of past Zeldas in favor of an open sandbox with copy and pasted content spread throughout.
