Timegating is only a problem at the start of the patch because blizzard is now dripping content on a weekly basis. Dastardly duos gets a new fight every week, visions gives you 40 minutes of content every week and so on.

But if you join the game 1 month after the patch you get to play everything all at once, it's a non-issue.

As for timegating delves raids weekly caches etc that's a 100% good decision. If these things had no timegate people would get hundreds of pieces of gear at no effort.

You can still get hundreds of pieces of gear per week but you need to do m+ for that. You can't just brainlessly do a 3 minutes long world quest dozens of times per day. That's just a catch-up.

There is an overarching story (for Alliance at least, I don't know about Horde), it's just not in your face with it.

Every settlement is desperate for aid, eventually asking you to get assistance from the next settlement, but they're also fucked with their own problems. So the Alliance is crumbling apart, because their armies are off doing fuck knows what and not defending their own lands, which all turns out to be from Onyxia's political meddling.
Playing with the voiceover addon got me to actually parse these thousands of lines of quest logs instead of ignoring it all, I recommend trying it.

Rendered cutscenes are stuff like the end of zone cinematics in WoD and Legion, good cutscenes are in-engine with custom animations and lip syncing, and then cheap cutscenes are this. Its a fun game to play in bursts, (usually when a new raid tier comes out) but I struggle to find longer term enjoyment.
The most fun is getting a fresh character in a new tier and slowly gearing up and working toward bis while clearing the raid and doing M+. Once you get to the point where upgrades are very scarce and you're just vault fishing or praying for tertiary stats, the enjoyment and motivation goes down pretty hard.
Historically they've also made mythic raiding needlessly annoying and restrictive to participate in. Same server, exactly 20 players, same raid ID makes pugging or finding subs hell. Even the times I've tried joining mythic guilds the player turnover is incredibly annoying to deal with as you get past the early/easier bosses.

We know what happened. Metzen came in and basically made them scrap the original plans for the post launch content of the expansion to turn it into Midnight and Last Titan instead as he didn't think it could all fit in one expansion.
The problem is that they didn't have any actual plans ready to set up the new direction of the next 2 expansions, so they made Undermine and K'aresh at the same time to essentially serve a filler until the actual 2nd act of the original expansion plot, Midnight comes out.
But they realized it'd feel like filler so they had to kill off another Horde character so something notable happened this expansion.

So the first thing to know is that this feature is not using your large cooldowns, it is only rotating your most basic abilities. It's also not applying DotS. So disc priest for example only gets to automatize smite, pain, mind strike and penance which is not even 10% of your spellbook.

Besides that, on paper it increases your gcd by 20%, and the impact of this varies. For a gcd oriented class like fury warrior it is a straight 20% dps nerf. But for casters not so much because your gcd refreshes during cast time so they barely feel the disadvantage. I know it can execute 92% of potential DPS for a specific spec but I don't remember which one it is, but this "92%" is tested on a player that still uses their DoTs and cooldowns optimally, and using these cooldowns effectively is way harder than just pressing the 3 buttons that compose the rotation when they are off cd

In short it is an accessibility feature and also good if you want to turn your brain off and still do content. Will be great for alts too. The people complaining about it and calling it an auto-battler are absolutely retarded.
