NFS3:HP, HS, PU for classic NFS games.
HP2, U2, and MW 2K5 for the Black Box era (Underground optional).
HP 2010 and MW 2K12 for the Criterion period.
And then, this is just my personal opinion, Rivals and Payback for Ghosts' era.

The only truly memorable ones are the Black Box era, so HP2, U1-2 and MW, everything else is just allright. My favorites are HP2 and Underground because I actually like racing games and don't do the open-world meme, but U2 and MW are definitely good games.

If you want edgy ones- play Most Wanted 2005, Carbon, and Rivals.
If you want to race supercars- play Rivals, any Hot Pursuit game, and Most Wanted 2012.
If you enjoy ricing out cars- Underground 1 and 2, Underground Rivals, and Heat.
