We are almost a quarter century past the release date of wind waker and there are a healthy contingent of Zelda fans that seethe about its artstyle to this day. The west, outside of weebs, just doesn't like cel shading/cartoon style graphics. The demand for gritty realism is so high, its destroying the western game industry.

That's a terrible idea, OP.

The realistic style makes the monsters look like beasts, so hunting them feels like a epic thrill. Making them chibi and saturated not only would massively take away from that vibe, sane people don't like killing cute things.
