A lot of it tends to be boring fluff.
The books in TES games come to mind. For every piece of actually interesting worldbuilding theres also a bunch of wordsalad junk.

Played Expedition 33 and listened to all the journals. They were normally interesting. Some Elder Scrolls stuff interests me too, because I sometimes roleplay characters and like to know some of the deeper lore.

I used to, in some games where the lore is good.
TES and WoW had decent books. Also edgy stuff like that MGSV prequel's audio logs.
VTMB also had a cool segment where you visit sewers, which have a manager room with a journal in it, then you go down a bit and find another, older level with an older supervisor room with a journal written in more archaic english and which is 100 years older.
