I know that feel too well, bro. I should do a NG+ indeed but a part of the fun is slowly increasing your stats, and by the time you beat the game you have enough levels to max all stats you need anyway.
In fact I don't think I've ever done any NG+ run of a souls game because I get bored very quickly even if I switch my build, probably for that reason.

What I do with new ER runs is open up CE and spawn in all the materials needed so I can skip the tedium of visiting every church. I just level the estuses as needed so I don't just get 15 +10 estuses immediately.
