Fallout 1 and 2 are pretty simple, and have a lot of freedom in how you approach stuff, so you can figure some way to progress. Wasteland 2 is very easy to get into if you are somewhat familiar with xcom combat.
Dragon Age Origins is quite approachable, although the skill descriptions are obtuse.
Star Wars Knights of the Old Republic is also in that peak Bioware era, very easy and enjoyable game for the most part.

I mean it's kind of a complicated feeling on this one. Post-release patches and the DLC that the PC version comes bundled with give some good content, but the base game is disappointingly shallow unless you really like some of the open spaces, and if you haven't treated yourself to the whole lore of the series up to that point including mobile game plot, it basically becomes a garbled bunch of nonsense. I don't hate KH3, but for a "finale" to the main arc proposed at that point, it was pretty miserable to go through at release.
