It has it's universe's Jesus, complete with 12 Apostles and virgin birth and all, but it's drastically different in anything else. The game itself doesn't disrespect Christianity, it just has it's in-universe version of it and it's in accordance to the rest of the world: mostly violent.

Weapons can just as well be seen as a way of self-defense. As for the blood sacrifice, it's a mean of protection.
Yeah, Al isn't a completely benevolent god, but compared to the others he's a lot nicer and actually seems to care. Also, God of Fear and Hunger also caused a lot of suffering, yet actually cared for Humanity. Old Gods (and a lot of the new ones) just don't give a shit.
