first, how have you never played pokemon?
second, if you want to start modern, you're better off emulating black/white. you could start on bw 2 honestly, they're considered some of the best modern ones. of hg ss.
gameplaywise, pokemon is baby's first rpg. which isn't bad by itself (i'd put golden sun in the same level), it's just very obviously geared towards kids who aren't sweaty gamers. so it might get boring. the only complexity is making sure your 6 pokemon have good elemental coverage over strengths and weaknesses.
If I were you, completely blank slate, I'd start on heartgold. Or Crystal. Personally, I think Crystal is the most true to form pokemon game in terms of play and atmosphere

People complain about these games being slow, but that's just how pokemon is. I tried to go back to pokemon after playing the SMT series and pretty much every pokemon game is unbearably slow in comparison.

I never played Pokemon cause I never owned a Nintendo console growing up let alone a DS.
I'm playing this one cause a friend told me the previous games had some growing pains and this is when they really figured out the gameplay, so I'm trying to play as many of the good ones as possible by starting early.

respect. the last nintendo console i owned was a GBA, and I've emulated ever since i learned about it. i'm not gonna get a switch just to play metroid dread.
i stand by what i wrote earlier: black/white 2 would be better than diamond. crystal would be best for, in my opinion, the true soul of pokemon. the only function added to pokemon after crystal that doesn't seem like a gimmick is duo battles in gen 3.

Some Pokemon evolve by leveling up, some evolve with evolution stones, some don't evolve. Pokemon like Abra, Gastly, Machop, Onix, that require multiplayer to fully evolve unless you are using a romhack that bypasses those requirements, so avoid them or cope with the form you're stuck with.

I would have said gen III for that. Even then the first two generations aren't bad, a little awkward at times but pretty clean by Game Boy standards. That said their remakes are just superior so there's not much point in going back besides nostalgia.

No, this is when competetive was at its peak, but gameplay wise you've picked the slowest game in the franchise, though if it's your first game you wont notice too much

Try HG/SS after, same gen but perfect remakes of gen 2

Avoid gen 5 thats when it went to shit.
