Pretty much. Right now we have the first full palace and I believe the first half of the second palace. Next update will finish off the second palace and then they start with palace 3 which I believe is done over multiple updates.
P5 setup in general was always perfect for a live service game since all they need to do is keep introducing new targets.

Not true. If you spend them early, you're "regaining" them since your passive energy gain will start generating those more valuable resources earlier.
You can look at it mathematically too, you need to spend X stamina at low level, Y stamina at medium level and you'll spend Z stamina at max level. X, Y and Z are constants, whether they're made from stamina potions or passive income is irrelevant, the sum total is the same.
This only doesn't end up the same if you consider XP sources from other sources than stamina usage, so you should do all your side quests/collectibles before using stamina potions

when fighting the last guy if you spam switch between the attacking commands and guard/item while pressing space you can trick the game into doing a regular attack and it continues normally
doing it a second time just kills him, skipping the downing and all out attack
