This is what makes RPGs stupid.

Either you're underleveled and you get wiped or you're overleveled and blow through shit.
Rarely are you in a combat situation where choices matter.

Smart ones just impose a level cap per area with EXP scaling, design bosses around it, and make sure players will hit the cap as long as they don't avoid combat.

Yawn.
Still a solved game.

I avoid random encounters then fight the boss while severely underleveled

Why have levels at all at this point.

If you’re underleveled it’s usually totally possible to win unless there’s harsh level scaling that just doesn’t allow you to win. It’s like a difficulty modifier. The issue is that newer RPGs do absolutely everything they can to keep the player over leveled for people that don’t like the genre. The most extreme example I’ve seen is Persona 5 Royal, where even if you ignore the OP tools the game showers you with, the balancing is still tuned way far in your favor.

Just play better RPGs that actually feature challenging content.

gather everything and then face a boss battle that demands that I use every single thing I've learned and every single skill to beat it, aND MORE!

Always left.
I'm more afraid of overlevelling or abusing something broken than the possibility of failure. If you don't risk losing at all then it's not even a game anymore by definition.

I don't really mean to, but beating every random encounter generally makes me overpowered against bosses.

I like exploring and finding secrets/treasure so Im normally way over leveled for stuff

I mostly play games of the type where this artificial dichotomy fits that are too unforgiving to ever allow the version on the right to happen. Even if I don't make too many mistakes it's still a challenge.

what if there was an RPG with few or no combat skills?

If it is an ARPG I will tackle on the boss as early as possible to maximize the difficulty, if it is a standard turn based RPG then I will take my time and explore everything prior to the boss.

Yui. Kyouko would be correct if they weren't talking about JRPGs where your success is almost entirely determined by numbers.

It can sometimes depend on the game but Kyouko is always right about everything and she embodies Amor Fati and she is my darling daughter i love her
I definitely hate winning fights in a souls game where it feeled like i was overleveled. The first half of elden ring was like that
