Yes, that doesn't mean when you disassemble it it is a good idea to put paste on there. graphite sheet has no mess, is easier to install, lasts forever, isn't as sensitive in coverage so you have more leeway when screwing the heatsink back on and cools extremely well.

peanut butter is bad for that, toothpaste works almost as good as thermal paste, just with a fraction of it's costs, and you can even take care of your oral hygiene with what is left of the paste, which is cool i guess.

I did it on a couple of Zotac 3090s a while ago. The thermal paste on the die itself wasn't the problem but the stock thermal pads that are supposed to keep the VRAM cool were fucking horrible. For some reason the stock ones were those thick oily pieces of shit that resembled sticky rubber feet more than something that's supposed to conduct heat.
Swapping them out helped temps a lot and the card never goes over 70C now even if you push it to the limit. The cards now stay quiet instead of hitting 85C over modest usage and having the triple fans go off like a fucking helicopter.

My GTX 1080ti started to cause issues after ~6 years of use.
I searched for what might be the cause and that got me to change the thermal paste within the GPU
Cleaned up the old paste, added new layer, this completely fixed the GPU and its issues
But the malfunctioning gave me a premature scare so I sold it for ~300 bucks and bought a bit better AMD GPU

Changing the thermal paste of your GPU is legit, but can be a hassle. Also voids the warranty once you remove the tape from the screw, but by the time you're changing the paste, that warranty has probably run out.

Forgot to mention: the 6 year old thermal paste was completely dried up, no surprise there. Changing the paste can actually breathe new life to the GPU, so don't throw yours away at the immediate signs of malfunctioning.

Brand-wise I used one of the cheaper commonly recommended brands. I don't remember their name but basically a single level above random no-name chinkshit in terms of price for pads.
In terms of thickness, I just looked up what that specific model uses. In this case the back and the front both used differently sized pads so I had to buy two different versions. This seems to vary depending on what third party card you got so I recommend doing some research beforehand.
The swap itself was piss easy.

Most new high end GPU models come with ptm now and it's only going to get more widespread. It works great right out of the box and doesn't dry up overtime. My card came with PTM runs at like 60C under 100% load out of the box. The implication that you need two months for it to "cure" is retardo cope by you. It's the superior thermal interface and anyone not using it is wrong. Simple as.

Sold my old 2080ti to a friend for cheap, got that card several years ago from another friend. Never bothered to change the termal paste and the guy I sold it to did. It went down 12 degrees in Celsius when running the furry ring of stress.

I had been playing the same games for years on end and they all suddenly started to run badly, awful framerates, sometimes I'd get black screens, I'd have to restart my PC often to fix bad performance.
After changing the paste, all of these issues ceased, so my logical conclusion was that the issue wasn't with other parts of the PC. I had the same parts for a while with the new AMD GPU, so I'm quite sure it was the 1080ti, with the old crusty paste.

There's this paste cleaning liquid that smells like candy, comes in two bottles, first one to clean the gunk, second one to prepare the surface for new paste. Cleaning and reapplying was quite easy, despite having never done it before. First time opening a GPU too.
