Out of the top of my head, Baldur's Gate 2, Fallout New Vegas and Skyrim didn't had fetch quests. No one ever made a big deal about that one aspect since they had other things going on.

I'm gonna be honest but Witcher 3 was garbage and dragged on. I don't know if it was the story or the escort/follow missions, but I forced myself to rush through HoS. I couldn't muster up the will to play BaW. The most enjoyable game for me was Witcher 1 and that's sad considering its aged poorly.

from my own personal experience I enjoyed 3 because it was my first entry in a while since I haven't played a heavy story driven game I really like the whole Witcher concept and it did indeed dragged on quite a bit it felt a bit like assassin's Creed one or two entries and you kinda want to clock out
