I'll use motoha as a singular example because if I went through all of them I'd be here all day.
She feels more like a real person rather than a tomboy stereotype. Her behaviour is relatively natural, instead of the usual case where you can write a single sentence about a character's mannerisms and use that as a cheat sheet to immediately know in advance exactly how they will react to all scenarios. As an example, instead of being treated like a one-dimensional character trait that's pulled on for laughs, her vulgar outburst in the first palace is a one-off occurrence and a reasonable behaviour given the emotional state she's in at the time.
Her interests have more depth than other persona girls. Baseball doesn't consume her character entirely, it's something she does in her spare time, and a major part of her backstory, but it's not an all-consuming trait, being referred to just a couple of times during her SL. In the same vein, her tomboyish nature isn't treated as a character trait which writes all of her interactions in advance.

I would say the story is the most appealing part of this game though because the main story literally feels like a P5-2. It even follows the same structure of getting a new main party member per Palace. Atlus at this point has a clear end point in mind with there going to be 7 treasures the group needs to acquire and I imagine if the game isn't doing great they will end it there, but that will still likely end up being an 80-100 hour main story with how big the Palaces are.

if you just go to the point where you unlock mail you can pick up the 1500 free gems (10 rolls) and then you should also have enough gems for like 6 more rolls
so if you just do those 16 and reset it should be sub-10 minutes
some guides will say go up until you unlock the grappling hook (20 rolls) but that's an extra like 6-7 minutes.
