They could’ve been working on a new 3d mario alongside dk, odyssey took 4 years to make with the dev team working on captain toad treasure tracker at the same time for its first year of development, it’s been double that since odyssey with only 3d world + bowser’s fury in the meantime. Going back to captain toad treasure tracker, galaxy 2, 3d land, 3d world, and captain toad treasure tracker were all released over a course of only 5 years, 2012 being the only year without a game from that team

Bowser's Fury was also mostly NoA/NST so really outside of Mario 3D All Stars(which are ports), EPD 8 has basically not had any significant output since 2017 that wasn't just overseeing NST or 1-up Studio, or consulting work for EPD 10 on Super Mario Wonder.
The Switch 2 began planning around 2019 and they had a general idea of how strong it was around 2021. It's not implausible there's a staggered project ready to be pivoted to or something they're saving for the obligatory event in September.
