It's not a matter of it breaking immersion, it's a matter of it being bad writing. With all of the world-building they have in a game like Dragon Age, they really couldn't have come up with something that even remotely fit with the world? Add to it, non-binary is possibly a term that will change over time. Look at terms like queer. It went from meaning weird, to being derogatory, to then being reclaimed, now it's outright used in some definitions of identity. Non-binary could age out within the next few years. You know what doesn't age out? An in-universe creation that still retains the message, but fits itself into what already exists.

Veilguard's problem wasn't some character saying they were non-binary, the problem was it was fucking terribly written schlock that tried to pander. Plenty of games tackle gender, sexual orientation, all of that successfully. Veilguard was a terribly written, designed, and made game.

IMO, as just some single consumer/customer, the problem with my immersion and tackling this retarded fucking topic is it never makes sense in the majority of games.
A lot of times they use modern day terms which is stupid, or it's extremely shoehorned.
There was a hermaphrodite in the SMT games, Digital Devil Saga 1 and 2, and it was fine.
Outside of video games, there was also transgenders in Monkey Man, the film, because they were closer to Shiva and it was a religious thing. Come to think of it, I'm pretty sure Vivec is also of both sexes. The problem isn't the concept, it can be alien and interesting, the problem is it's shoehorned for modern day politics and not because it's interesting.

Veilguard was terribly written, but one of the most accurate predictor of bad writing is a writing that focus on gender and sexual identity in a genre that is not naturally about it, like romance. This has been a consistent rule in video games as in in books, movies, and comics.
