Depends on how much time you’re willing to invest. Starting from the beginning gives you the full context and evolution, but if the early stuff is janky or aged poorly, it can turn you off before you even get to the good parts. Greatest hits are like the highlights reel-you see the best without the baggage. Personally, I sample the hits first, then go back if I get hooked.

Depends if there's an ongoing story or not. With FF it doesn't matter, but you should at least play FF1 at some point because it's good simple fun. The listen to the OSTs of 2 and 3

tried 9 shit and depressing setting, never finished
tried 4 boring, never finished
10, meh,
10-2 ..., never finished
12 Shame Fran and Balthier are stuck in such a shitty ass game
13, long ass corridor simulator, never finished
At this point I didn't even bother with this series, it's no dead to me.

I played FF in order until I got to 7 (hated it and thought it was a massive step back compared to 5 and 6) and then played 14 for 1400 hours before deleting my character (gave up hope in the game ever being properly managed)
Based on that experience play them in order but skip the bad games
