Single people after 30 usually have some defect with them. It might be minor or major, but it's enough that it's caused problems for potential dating partners.
Obviously, the most common flaw is a single mother, no man wants to date a woman who already has a child, and a lot of women who already have one kid don't want another. For the vast majority of men who want children of their own, this immediately locks the woman out of the dating pool unless they're willing to compromise.
Beyond that, you have things like the wine aunt types who have no interest in an actual relationship beyond occasional casual sex, the massively obese, the criminally ugly, bipolar basket cases, and other less identifiable problems. I knew one woman who was so hung up on her ex boyfriend from her early 20s, she didn't date until 31 again. Another who couldn't hold a job for more than a year. One who spent every other weekend or so snorting coke.
Occasionally you do find a woman who thought she needed to work on things like education and a job first before dating, but those quickly find out that waiting to date until you're 30 has massive complications because men who are single after 30 have just as many problems, albeit different ones. You have shut in losers who aren't fun to be around at all, absolute poorfags who barely hold a minimum wage job and have zero prospects, fatties, uglies, and dorks who have zero social skills whatsoever. You've also got your common failures like single fathers and drug addicts, deadbeats, and any number of other things.
The worst thing is even though there are good dating candidates on both sides, they're so rare and hard to find most of them will settle for someone incredibly shitty just so they don't spend the rest of their life alone. I've seen women stick it out in a bad relationship just because they have no self esteem or feel like they're in too deep to change and pass by better prospects because of it.
