I blame the devs. Its been almost 7 years since the teaser.
In that time frame they released Etrian 1-4 + both untold games.
There are hundreds of dungeon crawler without a second screen for map.
It cant be that hard to work something out.

Honestly, yes.

These games were made for, and exclusively work on, the DS/3DS. Having them anywhere else just leads to having cumbersome map-making controls (such as with the HD versions) or ditching the mapping portion entirely and being no different from any other dungeon crawler.

The franchise is dead. Let it stay dead. Don't just bring it back as some sort of distorted, bastardized version. Just be happy that the series existed at all.

You can use the touch screen if you buy a Switch stylus but I didn't have one. Not sure if and how well a finger works. But with a stylus it should feel roughly similar to how it does on DS I'd imagine.

No, that's not the case at all anon, I've played all the games on DS and 3DS hardware. It's called muscle memory, I can learn and adapt to new layouts. Yes it's better on the DS systems but it still worked very well and was fairly fast once I got used to the stick controls. Most of the time you just take a step, face each side, and draw a wall. Since the cursor follows you it's nearly as fast as using a stylus. Areas that have lots of icons that need placing is where it starts to slow down more with all the tool switching but never to the point of ruining the experience. This could be improved upon with a quick tool select button modifier with an unused shoulder button since only one is used for drawing.

This is probably fine to anyone who only played them emulated, but actually drawing maps was designed to replicate the feel of needing to do this with graph paper.

This whole feeling was a major part of these games. A new game with an auto-mapper or forcing the players to do it themselves by swapping to a map screen and trying to draw with sticks, is just a generic dungeon crawler with the same character designs and same music composer. It doesn't have anything to make it standout from the rest of the genre.

When porting existing games to new hardware there is an allowed expectation of jank. The HD versions being obnoxious at times to map is defendable due to modern systems not having a second touch screen. Any future entry in the series would be harshly criticized having a janky interpretation of the functionally that the DS had naturally. It would have to have some sort of mapping system like every other first-person dungeon crawler on by default. By sheer difference in hardware, the series looses a large aspect of its charm.

You're not an EO fan if you think the mapping is the only good thing about them, they are still far better than other similar games even without it. The superb art, music, combat, party building, and so on all put it above the rest, not just the mapping. The series is too good to kill over no second screen.

Yes, even if a new entry came out that was the same level of quality as the originals it would tower over other games in the genre.

Losing one of the key pillars that made the game original, or continuing the HD version's interpretation of it, diminishes the experience.

Drawing walls and floor tiles was fine. Having to fumble to place down icons was a pain. I quickly gave up making notes on the HD versions because it just wasn't worth the time despite me cataloging what was in every chest in the originals.

I don't want to lose mapping either and the hd collection proved that the series can work on one screen. The stylus option does still exist on Switch as well but you need to buy one separately, I simply never felt the need to since the sticks worked well enough. Like I said, quickly changing tools could be addressed with a quick select button. For example, hold down ZL and then have a tool wheel show up that lets you select a tool with either the analog stick and/or face buttons. The specifics would need some tweaking but the hd collection laid a solid foundation for one-screen, non-stylus mapping.
