Ralsei would've never taken off the hat if she wasn't there to tell him to do so. It's why Ralsei's icon during battle remains as his Chapter 1 sprite. Susie's changing the prophecy bit by bit, until she ultimately subverts it entirely through the power of friendship.

I've never played any bullet hells besides Deltarune, but the battles aren't difficult at all, at least on a normal route. The special bosses are a bit harder, but you can get through them with enough practice.

I think Ralsei's just unaware that Susie's isn't the Second Hero and how much she's breaking the prophesized order of events. From Ralsei's POV, things are going as described by the prophecy. I imagine once we get closer to the events relating to Susie and Noelle ("Love finds its way to the girl", etc.) Ralsei will realize that Susie was never meant to be the Second Hero at all.

That's what I'm thinking will happen. Ralsei will realize that Susie was meant to be the Dragon (or whatever equivalent to the Prophecy that is), but she's become the Second Hero. Maybe the real tragedy is that even though Susie managed to change her role in the Prophecy, it still isn't enough to change it because it only resulted in Susie and Noelle switching roles.
When I first played through, I thought this was just Noelle being confused by the idea of Kris even having enemies, but now I'm wondering (considering the n3w3st_g1rl post) if it wasn't more reason for Noelle to think it was Susie Kris was flirting with
