What the fuck even is Deltarune? I'd never play Undertale but I least get the gist of what's going on by hearing people talk about it. What I've gleaned from people talking about Deltarune is that it seems some gay slice of life dating sim using some of the Undertale characters but not really them.

That's exactly right. It's an alternate universe VN with the Undertale characters. There's no gameplay, you just choose dialog options which decide what route you take. I’m in the same boat, I eventually understood Undertale’s beats by osmosis but Deltarune’s whole deal makes comparatively little sense in passing. I kinda don’t want to ruin this weird non-fascination feeling by engaging with it directly though.
