Saint George is one of the very, VERY few exceptions, most because unlike most other saint stories, it's not actually a church legend, but rather, a adoption of a wide-spread folklore story repurposed to serve the church - it's not in any way based on an actual person.

I also very vaguelly remember one Saint story about a guy who was actually just scamming the living shit out Indian rulers (at one point, he took massive amounts of money pretending to be an achitect and promising the Indian king the most beautiful and impressive castle ever build, only to spend all of the money among the poorest people. When asked "where is that castle you promised", he replied: "I've build you the most beautiful castle imaginable: A castle in the heaven itself!"
He got executed for that.
So yeah, those are your average catholic saint stories, really. Entertaining, but not exactly gameplay material.
