2033 (original) is great. Intense stealth and firefights, great set pieces and atmosphere. One of the best implementations of a hidden ending.
Last Light severely dumbs down stealth, beats you over the head with "your actions are being evaluated". Didn't like it overall, but it had some decent moments, The remastered edition of 2033 borrows the dumbed down stealth and visual assets from this one.

I found Eschatos to be a reasonable challenge on Normal, it also has an Easy mode if you're new to the genre. Angel at Dusk also has a tutorial that teaches you fundamentals. Blue Revolver is kinda tough but it also has a Novice mode I haven't checked out yet, so it could also be a good pick.

Blue Revolver, there's enough there so you don't need to just jump into instant rape. People only call shmups a bad genre because the "start the game, die and restart" formula is extremely tedious. The best way to go about them is actually to use a training mode or save states to practice specific areas until you have the consistency to do it all in one run
Mushihimesama also has a very easy novice mode and is at least somewhat easy by CAVE standards but that means it's still fucking hard generally. It just has a mode that isn't
