Usually because of huge textures and semi-optimized art assets, and shitloads of audio files because AAA games need to ship in 20 languages to have any hope of making money.

Just download a program like WinDirStat to get a visual indication of where game file bloat happens in the game's install directory. Assuming it's not some shitty game where all of the content is just bundled into one massive file.
