Is there a comprehensive list of parryslop? Not any game that features parries but where it's a 'do or die' thing like Metal Gear Rising, Sekiro, Lies of P, Star Wars Fallen Order etc.

Aside from what you mentioned, there's also Steel Rising, Stellar Blade, Wo Long, Doom Dark Ages, and I guess Black Myth Wukong? nuGod of War also had heavy parrying mechanics.

I wouldn't put Wukong in there. It has a parry system and the game really should be played with it but it is definitely not mandatory. Khazan is one that belongs here I think. You can technically dodge instead of parry if you build around it but the way it plays even with dodging feels like parryslop.
