The remake kills the vibe entirely. Mafia has a magical aura now and then. The smooth jazz, the clunky yet already apparent open world. And on top the slow and methodical classic criem drama. It all fits perfectly.
The low poly clunkyness adds somethign intangible abotu it. The same classic 2D plattformers just have soul. Or Jedi Knight mogging all sequels.

I too would have preferred it if they kept the original game completely intact and just gave it a graphical/texture overhaul. Something like what they were able to accomplish with Oblivion Remastered. Mafia Definitive Edition just isn't the same game anymore. Like at all.

The entire game was rewritten. The characters are different, their motivations are different, the music is different, the atmosphere is different. Compare the opening scenes:

I think it's still perfectly possible to like this new version of Mafia, but if you went in hoping for that original game you knew and loved, you were surely disappointed on that front. I will not say Mafia DE is a bad game, but it's a bad Remake.
