Does a game having good gameplay just mean it's hard enough that you have to pay attention to not to die or think a bit about strategy, but not so much that you get stuck?

Good gameplay isn't born out of difficulty. Good gameplay means it has depth and creativity. Having difficulty options can further add to the gameplay, in the sense of nudging the player to utilize all the available mechanics instead of having a one and done solution to every encounter or problem the game throws at you.

what point is depth when its entirely optional because spamming the first thing they taught you works the whole run
why be creative when the shit you've been doing the entire game will continue to work for the rest of the game too?

they will not learn a mechanic unless you force a situation that makes them, all great games will have a "filter" moment that forces you to learn the deeper mechanics or perish. you NEED that spike
