In the case of indies, much like other artistic medium, we have a glut of devs who are only able to focus on the surface and craft of video games, without making anything that goes too much deeper. They don't conceptualize ideas that speak to anything deeper than what is presented at first blush: they make their pixel platformers because they like Mario, not because there's any care or thought to ensuring the game itself has anything resembling consistency of theme. Their games can be crisp, can run smooth, can have pleasing music or visuals, but if there isn't an underlying core that the developer is trying to convey, the experience will feel hollow and empty.

Universal Design Philosophy e,g quicktime events, open world design, poorly implementing mechanics from other successful games, quick travel, simplifying complex mechanics, lack of options to not overwhelm, the list goes on and on.

Sometime after 2005ish, the game industry believed everybody wanted certain things in their game, not realizing that people who play Risk might not like Monopoly, people who watch David Lynch movies might not like Adam Sandler flicks. They still haven't figured this out because video games are still a young media, and a hyper successful one at that, so they don't think anything is broken. But the people who grew up before this idea was found out had to sift through a lot of slop, but there was some genuinely fantastic games that were unique, or were an extremely polished version of a more basic idea.

There's only one way to do something right, but there's an infinite amount of ways to do it wrong. That's one single thing, compared to a near limitless amount of something that goes against the grain. As we age, we get bored, our minds are designed to filter out unneeded info, mainly things we have seen over and over again. That's why you forget weeks of your life, what you ate for breakfast, wore yesterday, etc, because you do the same thing, your routine is perfected, it's only events that break the mold that leave a lasting memory on people now. So when you see a perfect circle, you tune it out, you've seen it before, but when someone does it wrong, that's a new experience, and suddenly you now get that long dead bolt of interest resurface. Things became very industrial and less artisanal.
That's basically it. The group of 10 highly skilled young people working side by side in the same room, making the game from start to finish together, was replaced by a mega corporation of 400 people, not counting all the outsourced workers.
If before, as a programmer, you were next to the graphic artist, working literally together, now, as a programmer, you are taking care of some system that you don't even know how it will be used in the final game, while the art is coming from a group in India that made a fake portfolio with 3D models stolen from the Internet because they specialize in scamming Western corporations.

Let's assume you are talking about the original Super Mario Bros. If we take it on its own merits and not its historical significance, what are we left with? A game about a man getting from point A to point B before the timer runs out. The direction of the game, the core theme, is movement and using the controls as precisely as possible to facilitate that movement. Everything in the game ties into it: enemies act as barriers that will immediately end your progress, powerups give you the ability to eliminate these barriers either by giving you a mulligan or by letting you destroy them entirely, and even the final boss is defeated with precise timing and movement. Mario's essence, his soul, comes from movement, which has been a consistent (or relatively consistent) theme for his mainline games.

It’s crazy when you look back at the quality of animation for some of these cartoons from back in the day. Soul is hard to define but this is a great example. Someone put a lot of time and effort into this even though it was just a children’s cartoon because they loved doing it. Everything today is just decided by focus groups and appealing to the lowest common denominator.

A perfect circle, much like a game that tries to be photorealistic, is impressive from a technical standpoint but it lacks uniqueness and character. The closer games are to reality, the closer they are to all looking the same.
