They can be played in single player.
And enemy HP is scaled with the amount of players, so everything is doable.

No. Play anything up to GU. Anything else is modernized streamlined braindead zoomer slop designed to appeal to the lowest common denominator. The soul of monster hunter died when Worlds released. Monster hunter is a case study in why QoL and streamlinization rapes the soul out of every series it infects

I played MH:W on PS4Pro a few years ago and I liked it; monsters have no health bar and sometimes I was killing a monster for 20 minutes and out of nowhere i was killed

how can I know if I'm at a somehow good level to face some monster? There was a bird like hard to find on a tree, I climbed there, after 30 or 40 tries, I quit. I couldnt kill it. Had no idea what I needed to do

You generally prepare beforehand, depending on what you're facing. Get the appropriate armor and weapon, supplies, etc. Part of it is preparation, and the other is practicing on whatever you intend to hunt. Work your way from lower ranked quests to higher ones.

It can be playing fine in single player but wilds is an extremely mid game.

I started playing Worlds solo when wilds came out, very fun and doable. I semi quit after getting stuck at Velkana? the ice dragon fight in iceborne and I'm pretty sure that wasn't even his final form

All MH games can be enjoyed single-player. Multiplayer is only there to speed up the grind.
