I like that in 2 he's more unhinged due to going completely insane after being trapped on the beach for what felt like thousands of years to him but I thought the whole guitar thing was dumb.

Some of the coolest desgined just wasted on this character.
He just hates everything, and gives no compelling reason for it. despite all the screen time theres nothing really deep about him, at least in the first game you had a bigger threat to think about, but, here hes just allowed to annoying you and the character for no reason at all. drags the whole game down

couldn't care less about him. i play for the delivery, building, fucking with mules/bts, etc. gameplay same as the first game. when i replayed the dc before 2 came out i skipped all of his cutscenes

Punching him in the face was very cathartic, and the guitar duel was cool, but I wish the shredding was a little more in-depth than just mashing O.
Not even like a guitar hero level of quality, just different buttons mapped to different sounds would have been cool.

Why Kojima made like only two major bosses again? The world of DS is weird and creative but I think MGS had better villains and interesting boss fights.

No, they're effectively mindless monsters. Dollman has an optional flashback cut-scene where he talks about his origins that confirms as such.
His small daughter was severely struggling with her mother's death and petitioned Dollman to take her to the site of the voidout that killed her, thinking that her father's clairvoyance abilities would be able to get through to her and help her pass on. It didn't work and both of them were killed after the BTs attacked them. Dollman said that he could sense that nothing of his wife was left in there

BTs piss me off because they are polar opposites between gameplay and story, how could they let this trash piece of gamerdesign pass twice? It's so obvious plus they zeroed-in on the most unfun way to do it wrong. They're supposed to travel with the rain and get the drop on people, i'm not supposed to get the drop on them. Just trying to mourn the concept. It's my fault for caring.
