What's a mechanic you love that everybody seems to hate
I like degrading equipment. It means you cant just rely on the same gear all the time and think "well i got the best in slot weapon, game is over now"

Probably not a hated mechanic, but whenever a game lets you invest in a 'Luck' stat, I'm all in. Still yet to find a game with a satisfying Luck system though.

Time limits, there has never been a single game that is worse because of time limits but many that are much better because of it, i think its mostly computer game enjoyers that are against it since often all they can appreciate is mindless sandbox garbage, think about it, what is the last good computer game that features a strict time limit? Fallout 1?

Heavy consumable usage where not only do you have to judge your usage in an encounter to make sure you have enough for any upcoming tough fight, but also campaign-wide so you don't brick yourself (or at least make things much harder until you get things back on track)

Nah, zombies are retarded and never pose any threat unless of course you trigger bosses, to force the player to trigger bosses you need a time limit, Dead Rising 2 needs a time limit even more since its crafting system needed some kind of balance, else the player could just mindlessly collect items without feeling any pressure.

I don't mind degrading equipment in theory but it depends how it's done. I find it very annoying in BotW.
I like escort missions. I find them interesting mechanically and a good way to add stakes, player investment, and drive a plot too. Of course, there are some incredibly shit ones but a game like Ico builds around it in a way that makes it intriguing rather than annoying.

Personally I'd rather be limited by stamina than physical time. I swear time in Stardew goes like 1.5x faster then I'd like.

I'm Canadian and beavers are the best. The only ones complaining about them are nepobabies whining about their gigantic multimillion dollar rural properties depreciating in value because beavers dammed up their river and created some valuable wetland habitat. And hell, even if you have a pristine woodland property, muskrats are the real fuckers. They don't even create wetlands, they just build a big mud and twig pile to live in and shit all over the place, and their shit absolutely reeks, and if you ever run in to one anywhere near its shitpile it'll attack.

Collectables. I don't understand people who complain about cool things to find in games like Uncharted or Assassin's Creed.
It rewards exploration and it just feels satisfying to get all of them.
On a similar note, trophies/achievements are a good thing and any game without them is faintly disappointing. Good thing retroachievements exists.

Resource management.
Infinite health/ammo/whatever used to be a cheatcode or reward for playing through the game on max difficulty or similar.
Now I feel free full heal / revive / status removal / portal / equipment maintenance / level up / infinite grind with no time limit or opposition evolution has become the industry standard to "not inconvenience" the player.

I think Vivid Knight does it okay, as the more units are available the greater your potential strength (once you upgrade a unit, you gain a permanent perk and you're free to get rid of them). There are items that fight for the same tier slots, but all the unlockables seem to be flat out superior to the default stuff.

degrading weapons has the same issue as consumables that dont refresh. you will never use your best one because it will break. You may collect the best ones but you will always use the things that are easiest to get and use despite being the worst item.

Thirst mechanics. I liked it in Dark Cloud 1 and The Forest. It adds realism and base incentive. Connects you deepr to he game world by seeking out watering holes.

Depends what you want it to affect in the game. You can randomize numbers, like in % chance drops, or chance for events (or lucky/rare events... whatever that may be). It could improve chance of success, would be entertaining for happening in supposedly impossible scenarios. Maybe it could be a chance to trigger/proc a random ability that could go from wacky to really cool looking, like a spell that could polymorph a dragon into a chicken or tenders, to spells that have small chances of becoming things like a massive tornado, hurricane, tactical nuke, mini black hole, whatever. The more bullshit, the more exciting the stat becomes. It should behave like a wildcard for your character.
