"Immersive sim" is a bad genre name because it describes a subjective experience and a process rather than a concrete set of mechanics, structures, or design pillars. It's like calling a genre "fun adventure" or "realistic game", it tells you how the game feels, not how it works.

Like, to me it'd work better as the term for sandboxy stuff like terraria/DF/elin/elona but the definition means "deus ex clones"

Nah mechanically immersive games need their own descriptor. Call of Duty and Receiver 2 are both shooters but one is far more immersive due to in depth mechanics.
WoW and a lot of rpgs are straight up anti-immersion due to presentation and lazy mechanics. It feels like pressing a button to cast a spell vs casting a spell.

I also hate the "survival horror" label. It really just means "puzzle adventure game with horror aesthetics and usually just a facade of resource management". I've seen survival horror fans claim that darkwood and the forest aren't survival horror games because they're actually just horror games with survival elements. And the cherry on top is people claiming Crow Country as a survival horror game when it's really just a puzzle adventure game with completely option combat/resource management(it can literally be turned off).
