Saitama's entire ability can be boiled down to "he always rolls a natural 20." Doesn't matter what he's doing, if it's something that can be accomplished physically, he succeeds. It's not about strength, or power in general. It's about succeeding.

The only way to beat him is to like, explode the planet from the other side while he's playing a videogame or something. There's not necessarily anything wrong with this, but often when you're on the outside of some fanbase you can see them talking up some quote or moment like it's really cool, charming or memorable in some way, but in a vacuum it just seems lame. I don't think there's anything wrong with that because part of what makes stories work is engaging you to the point that when it gets to something that might seem silly at face value, you find that you're more in-tune with whatever the creative intent was and it's more effective than if you just had it thrown at you from the outset.
