Civil engineers and architects do not actually lay brick, bricklayers would still build the wall designed/laid out by the designers. And civil is only involved for earth retaining walls, they have nothing to do with the building itself. This image was made by an ignoramus.

On that point you wouldn't use brick for an earthwall anyway because giving them lateral or tensile strength and waterproofing them is more complicated that other options

I want a game about cob where you actually have to find a site with the correct soil mix and prep and lay the cob by hand with full freeform control over the design so you could do sculpted furniture, ovens, walls, cottages, etc without the typical "kit of parts that snap together" style vidya building.

Steel rebar reinforced concrete if you live in a world with the industrial infrastructure to make the supplies readily available. Rammed earth with bamboo replacement for rebar might be a non industrial alternative. With masonry/rockery style walls you're pushing it going taller than 36" retaining
