imo these games are ironically at their most fun when you're using a very "boring" build. my go-to is to just 2-hand a claymore.

Powerstance thief daggers.

>poison infuse them for a free AR boost [literally one of the only weps that gets bigger AR for being infused with poison]
>use stone ring to make your poise damage huge so you can stagger enemies EZ
>use broken thief sword in right hand for the straitsword moveset and better reach
