I wouldn't give her a redemption arc. I'd just have her be a pawn in a bigger game and she gets justifiably killed by Raynor and Tychus.

Retard, this entire setting is based on retcons from Day 1. Go and look up the official website pre-release, for example - the Protoss weren't an unknown entity, and have been in a cold war with humanity for decades before the Zerg arrived, to give just one example.

There was never any consistency to the story or setting.

Only the games constantly use material from those. For example the fact that Kerrigan was the one who murdered Mengsk's parents. For another the Tal'darim as a whole. Or the Conclave being murdered in-between StarCraft and Brood War.

I think everything would be mostly fine if you just skipped the epilogue and super saiyan Kerrigan.
You could keep everything else, upto and including Amon.
The sole purpose of 'redeeming' Kerrigan should have been to prevent her and swarm from being controlled by Amon. The base campaign of LotV already ends with Amon being defeated. You don't need the epilogue. Would it be perfect? No, but it would avoid the biggest problems.
