The closest thing to how a medieval peasent would speak is actually the Maine accent. British people changed their accents to what was invented in the 1960s as a fusion of Irish, and British lower class accents (invented by academics, but later popularized through the bbc.). For a time you had three major accents, but eventually everybody started using the invented one in Biritian.

You can actually watch this shift take place overtime by stringing together all of the Queen addresses, as she reigned for this entire time period, and went to speech coaches to learn the fake, and gay accent british people use now to be more relatable.

I'd love a game with reconstructed medieval languages. Basically any kind of flavor of french, german, italian regional dialects and old english (maybe ancient briton too).
