Having played all of those games and having gotten the top possible ratings in all of them, you're right. The lesson in game design I took away from it is that sometimes making things more realistic just makes the game more frustrating and less fun.

Contracts is proto Blood Money and the 2nd most easiest game in the "original" series.
2SA is 70% enjoyable if you're not a dumbass that couldn't figure out how the jank works and I'm not referring to the glitch
Even C47 is about 70% enjoyable

Just finished contracts and blood money, gonna skip absolution. Got woa to play through the trilogy. Should I play on master mode? Or professional with all the helper options off? I'd like it to play more like the previous games with minimal handholding, though I did like buying intel in blood money. What's the best set up?

I really like Contracts, its a great one, and the music was amazing in it.
It does fall off hard late into the game, the last couple of missions were bad, but the first 66% was pretty great, overall its a great Hitman game.

Why does everybody hate Absolution these days? I understand being angry at the time at the prospect that the franchise could pivot away from the classic Hitman formula, but in retrospect that didn't happen and it returned to it in the following installments. It's of course much different than the other Hitman games, but I had a lot of fun with it. Yes, the story is extremely campy, but it has a certain charm to it. One thing that I don't like about it is that it has basically no replay value. And I do prefer games like Blood Money and Hitman 2016. But I also think Absolution is fun for what it is.

They were not. They're pretty good despite being remakes of the most basic first 4 levels of Codename 47.
The final mission once you figure out the route to evade the French SWAT, which is fairly trivial, it is unironically the best final mission because it is not a forced shootout with mediocre as fuck shooting mechanics like C47, 2SA, BM and you can get a SA rank.

Even on normal mode you have to go out of your way to enable the story missions. Even when they trigger you have to open a menu to turn on the help.

hitman 1 and 2 were NOVEL. we had nothing like that before. Because of how fresh the concept was, it was certainly rough. I'd argue that even Blood Money's charm is dulled by now because nuhitman does it all but better.

The tones and themes in Contracts and Absolution were pure kino, however. The other games felt too tidy and rich.
