64 and Diddy kong racing are like that intentionally, because theyre KARTS. they exaggerated turning makes them more unpredictable and more unweildly.
Its not like MK7/8 where you can make every turn in the game with minimal effort and have pinpoint precision when making micro adjustments to hit item boxes and shortcuts

Strangely, I think Super has good controls that take time to get used to while DD has bad controls, and the main difference is intent. Super actually works as intended. It's easy to drive normally, while taking skilled turns and using your drift correctly is the hard part. Meanwhile in DD, ironically it's easier to learn drifting and taking sharp turns than it is to drive normally and make slight adjustments, which makes absolutely no god damn sense. It'd be like if learning every frame perfect trick in a Mario game was easier than learning just to walk.
