DS1 is the non-autist one. DS2 is as autistic as 3 but in different ways. Elden Ring is schizophrenic. Nightreign is for schizos who liked Elden Ring.

Honestly outside of spears, halberds and ultra greatswords/great axes any weapon should work fine for a newbie, but shortswords and greatswords in particular are solid options if you want an all rounder weapon for any situation

I usually play strength characters with big weapons. They're always really simple.
Just sword and board if you need training wheels. Maybe try to figure out parrying if you're feeling daring.

Then you have a lot of options there

With 12 Dexterity, you can invest in strength and get a bunch of strength weapons with low dexterity requirements

Or you can invest more in dexterity and get a different series of strength weapons that have 18 dexterity requirements

In terms of spells, you could invest into 18 faith later to use Blessed Weapon, a buff that augments physical damage, and some heal and force miracles

You can get a Composite bow quite early after you save a caged NPC in High Wall of Lothric tower, after finding the key a bit later, that bow scales with Strength and can help deal some ranged damage.

A good starting weapon either way is the Longsword and the Claymore, both of which you get in High Wall. It's ok to invest titanite early because you'll get plenty

If you want to keep dexterity low you can also get the Deep Battle Axe in High Wall, under the fire breathing wyvern. That is infused in a way that makes it do high damage but not dependant on stats, so it's very strong early, and then you can just un-infuse it into normal or infuse it with heavy (scales with strength)

desu i also have trouble against Soul of Cinder, his mage switch in phase 1 is free damage but every switch feels borderline bullshit in one way, his greatsword stane has one attack that has 3 different timings that are impossible to tell, his spear switch is blatantly untested because he pulls off DS2 tier glitched animations and his dex pyro switch feels like it has barely any openings that won't punish you immediatly afterwards
The twin demons are pretty simple, make sure to kill the demon that fires a lazer last because the fireball fuck is actual bullshit, i still have no idea how yu dodge his downward slam, sometimes rolling into him works, others it doesn't, rolling to the sides likewise, and rolling backwards is almost universally the worst direction to roll in

the trick to DS3 is that every boss is coded to teleport over to you and rape you like a nigger if you ever roll away, youre supposed to roll into the boss and autistically memorize movesets
