What history full of is them terrorizing disorganized dirt farmers, but the moment someone taught those farmers how to build fortifications and run military, they just slowly took over all land from which nomads feed, and bodied them from it or forcing them to completely assimilate. Simply because farming produced orders of magnitude more food, and hence supports more population.

Crops require a dedicated irrigation system that siphons fresh water from local communities and also causes sinkholes and droughts.

You'll have to do a lot of management at the start to get things set up before you can just sit around for a while and watch stupid things happen. And depending on what incidents happen, you'll have to give them orders anyway. You can set things up so that they'll make sure to have enough food, but you'll need to designate where farms are, what's being grown, and tell them to go hunt. If someone randomly joins, you'll have to make a place for them to sleep if you didn't already build extra space, because they won't construct any structures or furniture without being told to do so. In the case of enemies attacking, while they'll automatically fight back if enemies are in sight if they're set to, if you want them to prepare a defensive line or something you'll have to step in and assume command, though there's probably a mod to make it more automatic.
But once a colony is well-established, you can mostly just sit around and see what happens. You just have to keep in mind that a lot of more active actions like harvesting organs from prisoners, limb replacement surgery, and other things that aren't going to be everyday procedure will need your input.

It's also worth mentioning that trying to force certain events can be amusing in its own way as well. I had a random guy walk in and declare himself a part of the colony, and apparently he was married to someone that was already a part of the colony thanks to the random generation of relations. However, he was utterly worthless and contributed nothing whatsoever. Banishing him would have worked, but everyone would have felt bad about it for weeks and it would have been boring to do that. So instead I set about trying to make him leave willingly via an extreme mental break. So I trapped him in a tiny room outdoors that wasn't given a proper roof, with no bed for him to sleep on, and only human corpses to eat. His clothes were mostly taken away, leaving him with just enough to prevent any kind of medical conditions from the cold, but not enough for him to not constantly feel ashamed about his nudity. He was constantly short on sleep, having a forced schedule of nothing but work, which consisted of running on a hamster wheel to generate electricity that was entirely wasted as it wasn't actually connected to anything, and about two hours of sleep a day. If, at any time, he had a mental break that was violent or destructive, he was beaten until he was calmed down. Despite the insane amount of abuse, it took him three extreme mental breaks that had him decide to leave to actually leave the colony, twice he walked halfway out and decided that being stuck in his rodent cage was better than being out in the world alone. Admittedly, it might have happened because he had so much time to reconsider his decision on his way out, as he was missing a leg which had been shot off while pacifying him once. But in the end he left of his own will and nobody felt bad at all. And most importantly, I had a good laugh.

I actually remember this picture on /pol/ one time and crunched the real numbers and while more "inefficient" (Not as much as the picture claims), the benefits of the beef outweighed that of just the pure grain so the point becomes somewhat moot.
That and based on the research that I did, the parts of the grain us humans cannot eat were given to the livestock since they could eat that, meaning that the 16kg of grain isn't accurate.

Cows are not fed grain with some exceptions. When you harvest grain the part that is edible of the wheat plant is only 1% of the plant. We eat that, 99% of the rest goes to the cow.

Raising cows is peak efficiency. Every vegan food we make produces several times more inedible waste that we can give to animals that we can then eat.

If you want milk for yourself or your family, get a goat. A single cow will produce enough to start a small business (there are thirdies who support their entire family with the milk from one cow). Goats will eat significantly less and are less picky with what they eat.

From what I have heard from homesteading people, you are almost certainly not ready for a cow. If you do go that route, find an high A2 beta-casein cow breed (Jersey, Guernsey, Normande, and Brown Swiss). Holsteins have A2 as well, but the A1/A2 ratio is lower.
